Kefir is traditionally a fermented milk product that originated centuries ago in the Caucasus mountains, and is now enjoyed by many different cultures worldwide, particularly in Europe and Asia. It can be made from the milk of any ruminant animal, such as a cow, goat, or sheep. It is slightly sour and carbonated due to the fermentation activity of the symbiotic colony of bacteria and yeast that make up the “grains” used to culture the milk (not actual grains, but a grain-like matrix of proteins, lipids, and sugars that feed the microbes). The various types of beneficial microbiota contained in kefir make it one of the most potent probiotic foods available.

So what about dairy-free kefir options? You can achieve some amazing results with kefir made from coconut, almond or walnut milk. These non-dairy milk kefirs are recommended if you want all of the benefits of kefir without the dairy.

The benefits of coconut kefir are comprehensive, but, from a high level view, this probiotic beverage is very healing to the digestive system and the liver and creates a strong immune system that is ultimately responsible for your good health.

This recipe uses real kefir grains to culture the juice of green coconut, and produces a healthful probiotic drink. You can either ferment just the juice and eat the coconut meat separately or you can blend the coconut meat with the juice to make a coconut cream.

ingredients

1 drinking coconut
1 tablespoon of water kefir grains
optional flavouring (fresh fruit, lemon, etc. what ever takes your fancy)

directions

Pour out the coconut water into a sterilized half-gallon or larger glass jar and drop the kefir grains in. Do not tighten a lid over the jar. Keep the air flowing. Wrap a towel over and around the jar and keep in a warm place for 36 to 48 hours. Come back and taste!

train the coconut water kefir into a separate glass jar and store it in the fridge or use it immediately with your chosen kefir elixir recipes. Rinse the kefir grains and store them in a small glass jar in the fridge, or use them immediately in another batch of fresh coconut water kefir.
